Just Corn personal “ELOTE” Mexican Street Corn Casserole

4 oz Karen’s Naturals Just Corn

1 Tbsp sour cream

1 Tbsp mayonnaise

1/2 oz queso fresco

1 tsp cilantro

pinch of chili powder

pinch of garlic powder

pinch of Tajin powder

lime wedges

salt/ pepper to taste

1. In a saucepan, cover the corn with water and bring to a boil. Turn off heat and allow to cool, drain.

2. Preheat your oven to 350°. Prepare a large oven safe ramekin or soup bowl with non-stick spray.

3. Combine the Karen’s Naturals Just Corn and the sour cream, mayo, chili powder, garlic powder, salt, pepper, and half the queso fresco in a large bowl.

4. Pour the mixture into the prepared baking dish. 

5. Sprinkle Tajin powder over the top. Bake for 25 minutes until heated through and bubbly around the edges.

6. Remove from the oven and top with the remaining cheese and cilantro. Serve warm with lime wedges. -Enjoy!
